Two delicate almond based meringue shells carefully put together with a flavoured filling. They are soft on the inside with a very thin delicate crust on the outside. Macarons are all about the delicate textures, and burst of flavour with every bite.
The flavours available change regularly according to season.
For weddings we custom make flavours. If you have a special flavour in mind that conjures up memories of your journey together, for example the pinna colada that got you talking on your first date, we will transform that memory into a macaron.
In a true french fashion, we love salted butter caramel. Firstly we caramelize sugar and then add salted butter with an extra dash of sea salt. Followed by fresh cream and a generous amount of 71% dark chocolate. This macaron has a wonderful balance between sweet and saltiness. With the highlight on the quality of the chocolate we use. Drawing inspiration from my childhood memories, I recreated the well known childhood favourite - strawberries and cream. We make a white chocolate ganache with Madagascan vanilla beans for the filling. In the centre awaits a surprise - a home made strawberry jam, using Hillcrest Berry Farm's strawberries. As a child, a very zesty tart baked lemon cheesecake was one of my favourite desserts. As part of the memories collection, I created the Lemon Cheesecake Macaron to resemble the same tart, zesty flavour. Made from cream cheese, lemon zest and white chocolate, this one will conjure up memories and create new ones,
